AMARANTH PLANT IS A SOURCE OF BENEFICIAL SUBSTANCES FOR HEALTH
Amaranth is one of the oldest cultivated plants. For several thousand years, it was one of the main cereal crops of South America and Mexico, along with beans and corn. In modern Asia, amaranth is popular among people of India, Pakistan, Nepal and China as a grain and vegetable crop.
According to data published in the book "Modern Perspectives on Amaranth" by the US National Research Council, amaranth grains contain 16% more protein than other popular grains such as wheat, rice or corn.The level of protein digestibility is amazing: it is 90%, which is significantly higher than the protein digestibility of soy, milk or wheat, writes William Malten in the American scientific journal "Our Dune". Amaranth contains essential oils for humans, such as linoleic and oleic acids.
Regular consumption of amaranth in food can significantly strengthen the immune system and reduce the risk of new diseases. Amaranth, its pectins can harm toxins entering the body. Amaranth reduces damage from radiation because it contains the flavanoid quercetin. Amaranth is also valuable because it contains vitamins A, V, S, E, D, K and minerals - calcium, phosphorus, magnesium, zinc, selenium complex. The plant is useful for its fiber content. Pectin contained in grain cleans the intestines, lysing substance improves immunity and relieves headaches, rutin strengthens blood vessels and protects veins from varicose veins. Amaranth powder is also added to children's food because it is very useful and digestible. Amaranth groats are also allowed as a cereal product for pregnant women.
Useful and healing properties of amaranth oil: heals inflammation, reduces facial redness, spots, acne and cellulite on the skin. Cleans the intestines from waste and toxins, suppresses harmful microflora. Normalizes digestion, accelerates metabolism. Amaranth has a beneficial effect on the cardiovascular system and blood composition. It moderates sugar and cholesterol levels and lowers blood pressure. It also helps with diseases of the nervous system, strengthens the musculoskeletal system, and also a large amount of fiber and slow carbohydrates help to reduce weight. A poultice made from the leaves of this plant, when applied to the skin, cures scabies, itching, hot boils, boils, and sores. In folk medicine, fresh amaranth is used to soften the stomach and stop bleeding. Tincture of amaranth helps in tuberculosis, prevents excessive blood loss, mental and hemorrhoidal bleeding.
Currently, there are more than 50 species of amaranth native to South America in the world. In ancient sources and some books it is called "ancient flower". Previously, it was used in many customs and ceremonies. Amaranth, recognized by the UN as a cultural plant of the century, is an important raw material for the development of the pharmaceutical, food and livestock industries.
Today, this plant is grown in large quantities in many countries, especially China, India, Mexico, Spain and Russia. In our country, including Andijan region, under the leadership of Andijan State University professor Moydinjon Mominov, a number of practical and scientific researches are being conducted on the cultivation, localization and use of this plant in various aspects of our life. Thus, scientists from Andijan created new varieties such as "Uzbekistan", "Andijan", "Ulug Nor" in the next four years. Higher yields were obtained from the areas where these varieties were planted. At the moment, a certified seed breeding center has been established in Marhamat and Kurgantepa regions. They are carrying out systematic work on the delivery of selected amaranth seeds to other regions of our Republic. As mentioned above, necessary pharmaceutical substances are obtained from amaranth. The most important thing is that no extra work and efforts are required to grow this plant. The economic efficiency of harvesting is high. In the following years, amaranth was planted on a large area, and an abundant harvest and, accordingly, income was obtained. Next year, it is planned to plant amaranth on about 1000 hectares of land in various regions of Uzbekistan.
